Striker Chef's Toowoomba Pasta

A one-pan recipe that uses instant noodle soup to create a thick, spicy Toowoomba pasta like those found in family restaurants, all in a single pot.

Ingredients needed 🛒1 servings

  • Fettuccine pasta, 1 serving
  • Shrimp, desired amount
  • Button mushrooms, 4-5
  • Green onion, 1 stalk
  • Instant noodle soup packet, 1
  • Butter, 1 tbsp
  • Tomato ketchup, 1 tbsp
  • Heavy cream, 200ml
  • Chicken stock, 1/3 tbsp
  • Grated Parmesan cheese, a little

Recipe 🍳

  1. Pat the shrimp dry with paper towels, then toss with 1 packet of instant noodle soup to season.
  2. Slice the button mushrooms. Separate the white and green parts of the green onion. Slice the white parts for sautéing and thinly slice the green parts, then soak them in cold water to remove spiciness.
  3. Melt butter in a pan. Add the prepared white parts of the green onion and button mushrooms, and sauté until the mushroom's moisture evaporates and they turn golden brown.
  4. Add 1 tbsp of tomato ketchup and sauté briefly to combine with the ingredients, enhancing the flavor.
  5. Add the fettuccine pasta and water (or pasta water) to the pan and boil over high heat for about 5 minutes until the pasta is fully cooked.
  6. Once the liquid has reduced to a simmer, add the seasoned shrimp and pour in the heavy cream. Simmer until the sauce thickens.
  7. When the shrimp are cooked and the sauce has reached the desired consistency, add chicken stock for seasoning and gently mix in the squeezed green parts of the green onion.
  8. Transfer the finished pasta to a bowl and sprinkle with grated Parmesan cheese to finish.

  3. Add pasta and water, boil for 5 minutes, then add shrimp and heavy cream and simmer until thickened.
  4. Season with chicken stock and green onion, then serve with cheese.

Cooking tips 💡

  • Shrimp can become tough if overcooked by sautéing for too long with vegetables from the start. Add them in the final simmering stage with the heavy cream to maintain a firm, springy texture.
  • Do not wash button mushrooms with water; lightly brush off any dirt. This concentrates the mushroom's natural juices, resulting in a deeper sauce flavor.
