  • 2 sweet corn cobs
  • 1/2 onion
  • 1 red chili
  • 3 cloves garlic
  • 1 handful fresh basil
  • 1 stalk lemongrass
  • 1 egg
  • 2 tbsp rice flour
  • Pinch of salt
  • 1 tbsp sesame seeds
  • Cooking oil as needed

Recipe 🍳

  1. Scrape the kernels off the sweet corn cobs using a knife, cutting along the length.
  2. Thinly slice the onion. Finely mince the red chili and garlic, leaving some texture.
  3. Tear the basil leaves into bite-sized pieces. Lightly smash the tough end of the lemongrass stalk with the back of a knife to release its aroma, then finely julienne the tender inner part.
  4. Combine the prepared corn, onion, chili, garlic, basil, and lemongrass in a mixing bowl.
  5. Add 1 egg, 2 tbsp rice flour, a pinch of salt, and plenty of sesame seeds. Gently mix until the ingredients bind together to form a batter.
  6. Heat a generous amount of cooking oil in a pan. Once hot, drop spoonfuls of the batter into the oil, forming natural shapes, and fry until golden brown.
  7. Remove the crispy corn fritters from the oil, place them on a rack to cool slightly, and serve with your favorite dipping sauce.
