- 2 sweet corn cobs
- 1/2 onion
- 1 red chili
- 3 cloves garlic
- 1 handful fresh basil
- 1 stalk lemongrass
- 1 egg
- 2 tbsp rice flour
- Pinch of salt
- 1 tbsp sesame seeds
- Cooking oil as needed

- Scrape the kernels off the sweet corn cobs using a knife, cutting along the length.
- Thinly slice the onion. Finely mince the red chili and garlic, leaving some texture.
- Tear the basil leaves into bite-sized pieces. Lightly smash the tough end of the lemongrass stalk with the back of a knife to release its aroma, then finely julienne the tender inner part.
- Combine the prepared corn, onion, chili, garlic, basil, and lemongrass in a mixing bowl.
- Add 1 egg, 2 tbsp rice flour, a pinch of salt, and plenty of sesame seeds. Gently mix until the ingredients bind together to form a batter.
- Heat a generous amount of cooking oil in a pan. Once hot, drop spoonfuls of the batter into the oil, forming natural shapes, and fry until golden brown.
- Remove the crispy corn fritters from the oil, place them on a rack to cool slightly, and serve with your favorite dipping sauce.
- Separate sweet corn kernels and prepare onion, chili, and lemongrass.
- Combine all vegetables and basil in a bowl, then mix with egg, rice flour, salt, and sesame seeds to form a batter.
- Drop spoonfuls of the batter into hot oil and fry until golden and crispy.
