- Boil 1 serving of thin wheat noodles in salted water for 3 to 4 minutes, then rinse thoroughly under cold water to remove starch and cool completely. Drain well and set aside.
- Heat generous vegetable oil in a pan and sauté 1/2 medium sliced onion until softened.
- Continue sautéing until the onion turns dark, rich brown—almost caramelized—then push it to one side of the pan to create space.
- Crack 2 eggs into the empty space, scramble immediately once edges begin to set, creating a moist, fluffy scrambled egg.
- Mix the sautéed onion and scrambled eggs together, then pour soy sauce, oyster sauce, sugar, and water into the open area of the pan.
- Stir continuously to reduce the sauce until it becomes glossy and coats the ingredients evenly. Add the finely chopped green chili pepper at this stage for extra heat.
- Place the cooked noodles on a plate, top with the savory soy sauce egg mixture, and garnish generously with scallions, sesame oil, and toasted sesame seeds.
