🙋 Recommended for

  • Those tired of the same old soy sauce egg rice and looking for a special twist.
  • Those who want to prepare a delicious, restaurant-quality bowl with minimal ingredients and time.

Ingredients needed 🛒1 servings

  • 1 bowl of cooked rice
  • 3 eggs
  • 1/2 green onion (white part)
  • 1/2 tbsp minced garlic
  • 1/2 tbsp soy sauce
  • 2 tbsp water
  • 1/2 tbsp cooking oil
  • A pinch of black pepper

Recipe 🍳

  1. In a small bowl, mix 1/2 tbsp soy sauce and 2 tbsp water to make a moist seasoning sauce in advance.
  2. Use only the white part of the green onion, halve it lengthwise, and finely chop.
  3. Add 1/2 tbsp cooking oil to a pan, spread it evenly, then add the chopped green onion and 1/2 tbsp minced garlic.
  4. Over a gentle medium-low heat, stir-fry the green onion and garlic to create oil infused with a premium aroma and flavor.
  5. Once fragrant, crack 3 eggs into the pan and leave them untouched so only the bottoms cook and become crispy.
  6. When the bottoms are somewhat cooked, pour all of the prepared seasoning sauce around the edge of the pan.
  7. Immediately cover with a lid and let the residual heat cook the tops of the eggs until they are moist and soft-boiled.
  8. Place the moist fried eggs, along with the green onion-garlic oil and the sauce, on top of warm rice, and sprinkle with black pepper to finish.
  1. Mix soy sauce and water to make the seasoning sauce, and finely chop the green onion.
  2. Add cooking oil to a pan, stir-fry the green onion and minced garlic over medium-low heat, then crack in the eggs.
  3. When the egg bottoms are cooked, pour in the seasoning sauce, cover with a lid, and cook until softly set and moist, then place over rice.

Cooking tips 💡

  • Mixing soy sauce with water to make a seasoning sauce ensures the rice doesn't become dry when mixed; it stays soft and moist.
  • Gently stir-frying the green onion and minced garlic to create green onion-garlic oil is the key secret that transforms ordinary egg rice into something special.
  • Cook the eggs to a soft-boiled state with a runny yolk rather than fully hard, so they meld into the rice and become much more savory.
