Dice the pork belly, potato, carrot, and king oyster mushroom into small, bite-sized cubes.
Place the diced pork belly and firm vegetables (potato, carrot, king oyster mushroom) into the bottom of the rice cooker inner pot.
Add 1 tablespoon minced garlic, 2 tablespoons soy sauce, and 2 tablespoons oyster sauce over the ingredients and mix evenly with a spoon to coat.
Instead of adding sugar, finely chop 1 onion to provide natural sweetness and moisture, add it in, and mix well once more.
Add 1 cup of washed uncooked rice, pour in just over 1 cup of water, then gently pat down the surface so the rice is submerged evenly.
Crack 2 eggs on top, keeping them whole, then close the lid and press the regular white rice cooking button.
When cooking is done and the alarm sounds, open the lid and use a rice paddle to break the eggs and fluff the rice by cutting in a grid pattern and folding.
If it still looks a bit wet, press the "reheat" button once more to drive off excess moisture and achieve a fluffy texture.
Once desired consistency is reached, transfer to a nice serving bowl and finish with a sprinkle of sesame seeds for nuttiness.
Dice pork belly and firm vegetables, then place everything together in the rice cooker.
Add minced garlic, soy sauce, oyster sauce, and chopped onion, and mix to season.
Add washed rice and just enough water, top with eggs, then cook using the regular white rice setting and reheat if needed.
Cooking tips 💡
Using unsoaked rice is the secret to fluffiness because presoaked rice can become too soft in the rice cooker.
Vegetables like the chopped onion release a lot of water, so using slightly less water than usual for plain rice will reduce the chance of a soggy result.
Instead of serving immediately after cooking, after fluffing with the paddle, press "reheat" once more; this will lightly toast the bottom, giving a subtle nurungji (crispy rice) flavor like stone pot fried rice.
