Recipe 🍳
- Freeze one packet of store-bought cold noodle broth in advance, then gently crack it with a mallet before use to create slushy ice chunks.
- Pour the slushy broth and the remaining liquid broth into a large bowl and mix together.
- Add chicken stock 0.25 tablespoon (or a pinch of seasoning salt), sugar 1 tablespoon, and vinegar 1 tablespoon to the broth.
- Stir in 3–4 tablespoons of fresh kimchi juice and mix thoroughly until the sugar fully dissolves, creating a cool, tangy kimchi broth.
- Add cooked thin wheat noodles to the broth in desired amount.
- Top with finely chopped kimchi, then drizzle 1 tablespoon of rich sesame oil over the kimchi.
- Sprinkle boiled egg, kimbura powder, and toasted sesame seeds evenly on top to finish.
- Freeze one packet of cold noodle broth and break it into slush; combine with the liquid broth to chill.
- Mix chicken stock, sugar, vinegar, and kimchi juice into the broth to create a tangy flavor.
- Add boiled thin wheat noodles, then garnish with chopped kimchi, sesame oil, egg, kimbura powder, and toasted sesame seeds.
Cooking tips 💡
- Use well-fermented fresh kimchi juice rather than less-fermented kimchi for a cleaner, fresher, and more refreshing taste without heaviness.
- Pair this dish with grilled fatty cuts like belly pork or brisket as a perfect post-meal refreshment—ideal as both a side and dessert-style dish.
