Cooking tips

  • Since the cooking time is short, be sure to slice the potatoes thinly so they cook through and become tender.
  • Removing the skin from the chicken thigh before cooking results in a cleaner broth flavor with less excess oil.
  • The glass noodles can easily stick to or burn the bottom of the pan while the sauce is reducing, so watch closely and stir frequently.
  • If you prefer a slightly thicker sauce for mixing with rice, proportionally increase the amount of water (broth) and soy sauce.
