- 1 bagel
- 2 slices thick-cut bacon
- 1 chicken breast
- 1 lettuce leaf
- 1 tomato slice
- 1 slice cheddar cheese
- 1 slice mozzarella cheese

- a little vinegar
- maple syrup, as needed
- mayonnaise, as needed
- a little whole grain mustard
- 1 knob of butter
- a little salt
- a little pepper
Recipe 🍳
- Combine brown sugar, vinegar, and maple syrup in a pot; heat until the sugar dissolves and you get a sweet and tangy syrup sauce.
- Brush the prepared syrup sauce onto the long, thick-cut bacon strips. Bake in oven, brushing with sauce every 5 minutes, for a total of 30 minutes to make candied bacon.
- For the lettuce, firmly hit the core against the counter to pop it out, then gently separate the leaves by hand. Slice the tomato thickly into one slice.
- Using a sharp knife, carefully slice the bagel horizontally into three equal layers.
- Butterfly the chicken breast by slicing through the thick side and opening it like a book into a wide, even piece.
- In a pan with plenty of bacon fat, place the prepared chicken breast; season with salt and pepper and cook. Toward the end, add butter and baste the chicken with the melted butter using a spoon to keep it moist.
- In the same pan with remaining butter fat, toast the cut sides of the three bagel layers until golden brown.
- Spread mayonnaise on the inner sides of the bottom and top bagel layers. Spread whole grain mustard evenly on the middle bagel layer.
- Assemble: On the bottom bagel layer, layer the cooked chicken breast, two pieces of candied bacon folded in half, lettuce, and tomato in order.
- Top with cheddar and mozzarella cheese slices. Use a torch to melt the cheese until bubbly and slightly charred. Cover with the top bagel layer to complete the three-tier sandwich.
- Make candied bacon by brushing a sauce of brown sugar, vinegar, and maple syrup onto bacon and baking for 30 minutes, brushing sauce periodically.
- Butterfly the chicken breast and cook in bacon fat and butter, basting until moist. Slice the bagel into three layers and toast in the same pan.
- Spread mayonnaise and mustard on bagel layers, then stack chicken, bacon, lettuce, tomato, and cheese. Melt cheese with a torch and top with the last bagel layer.
