🍽️ A hearty, one-bowl burrito packed with golden fried rice made from leftover rice and ground beef simmered in salsa sauce, all wrapped in a tortilla.
Lamb skewer seasoning (as a chili powder substitute, optional)
Pizza cheese (optional)
Recipe 🍳
Prepare the ground beef. Remove the core from the lettuce, then thinly shred it.
Lightly oil a heated pan and stir-fry 300g of ground beef over high heat until golden brown, about 3 minutes.
Season the beef with salt and pepper while stir-frying. For a taco flavor, add lamb skewer seasoning or chili powder to your liking.
Once the beef is fully cooked and brown, drain it through a sieve. Add 200g of canned beans (drained) and half a bottle of salsa sauce, then stir-fry together.
Simmer until the mixture is thick and not watery, to prevent it from spilling when rolling the tortilla. Turn off the heat and let it cool.
Make a fluffy golden fried rice using cold rice mixed with eggs. You don't need to dry it out excessively since it will be mixed with the sauce.
On a cutting board, lay out a tortilla. Layer it with golden fried rice, the beef and sauce mixture, and shredded lettuce in that order. Add cheese or cold salsa sauce if desired.
First, fold the top and bottom edges of the tortilla firmly, then tuck in the sides and roll it tightly like making kimbap.
Heat a dry non-stick pan over medium heat without any oil. Place the burrito seam-side down and grill.
Once the seam is sealed and the outer surface is evenly golden brown and crispy, remove from the pan, cut in half, and serve.
Stir-fry beef in a pan, then add canned beans and salsa sauce to create a thick beef filling.
Make golden fried rice with cold rice and eggs, and thinly shred lettuce.
Place the rice, beef filling, and lettuce on a tortilla, roll it tightly, and grill the outside until golden brown in a dry pan.
Cooking tips 💡
Drain the liquid (juice) completely from the canned beans using a sieve before using them. This removes their starchy taste and results in a cleaner flavor.
If the beef filling has too much moisture, the tortilla may tear or become soggy when rolled. Therefore, simmering it until thick is key.
Instead of stir-frying the salsa sauce with the beef, adding it cold at the end preserves its acidity and fresh balance, making it much tastier.
When grilling the tortilla, placing the seam side down first helps it seal neatly without needing foil or toothpicks.
