- beef ribeye 180g
- beef shoulder (chuck roll) 120g
- brioche burger buns 2 pieces
- American cheddar cheese 4 slices
- onion 1/2 piece
- button mushrooms 4 pieces
- tomato 1 piece
- lettuce 4 leaves
- dill pickle 10 pieces
- ghee (or regular butter) 1 tablespoon
- Heinz ketchup 2 tablespoons
- Hunt's ketchup 2 tablespoons
- mustard 2 tablespoons
- mayonnaise 4 tablespoons
- sous-vide egg yolk 1 piece
- Frank's RedHot sauce 1 tablespoon
Recipe 🍳
- Mix beef ribeye and shoulder in a 6:4 ratio, then grind twice using a meat grinder.
- Do not knead the ground meat; shape it into two round patties, each weighing 93g.
- Mix Heinz ketchup and Hunt's ketchup in a 1:1 ratio. For mayonnaise, mix in sous-vide egg yolk to make the custom sauces.
- Sauté sliced onion and button mushrooms in ghee over a heated pan until just tender.
- Grill or pan-fry the burger buns on low heat until the sides are lightly golden.
- Place the unseasoned meat balls onto a very hot pan, press down firmly with a spatula after 30 seconds to flatten them thinly and widely, then sear both sides thoroughly.
- Place two slices of cheddar cheese on top of the cooked patties and let them melt using residual heat.
- Spread ketchup and mustard on the bottom bun, then layer with sautéed onions, mushrooms, and the patty.
- On the top bun, spread hot sauce and the custom mayonnaise, then add lettuce, pickles, and tomato to complete the burger.
- Wrap the finished burger in aluminum foil and let it rest briefly so the cheese melts completely and the bun stays moist.
- Grind beef twice and form into two 93g patties.
- Prepare the sauce by mixing ketchup (1:1 ratio) and mayonnaise (with egg yolk).
- Sauté mushrooms and onions in butter, and grill the burger buns.
- Place the meat on a hot pan, press down hard to create a smashed patty, then cook through and add cheese.
- Spread sauce on the buns and stack the patty, vegetables, and sautéed toppings in order.
- Wrap the burger in foil and let it steam briefly to keep everything moist and cohesive.
