- tteokbokki rice cakes 20~30 pieces
- wooden skewers several
- sugar 1 tablespoon
- soy sauce 1 tablespoon
- ketchup 1 tablespoon
- gochujang 1 tablespoon
- water 4 tablespoons
- beef dashi a pinch
- vegetable oil 1 tablespoon
Recipe 🍳
- Prepare soft tteokbokki rice cakes and thread 4–5 pieces onto wooden skewers in a row.
- In a bowl, mix sugar 1 tablespoon, soy sauce 1 tablespoon, ketchup 1 tablespoon, gochujang 1 tablespoon, water 4 tablespoons, and a pinch of beef dashi until well combined to make the seasoning sauce.
- Pour the prepared sauce into a pan and simmer over low heat until slightly thickened and bubbling.
- Place the prepared skewers and 1 tablespoon of vegetable oil into a disposable plastic bag or ziplock bag, then shake gently to evenly coat the surface of the rice cakes with oil.
- Arrange the oiled skewers on the air fryer rack without overlapping, and cook until golden and crispy.
- Remove the cooked skewers and generously brush both sides with the prepared sauce to finish.
- Thread rice cakes onto skewers to make ddakkkochi.
- Mix sugar, soy sauce, ketchup, gochujang, water, and dashi to make the sauce and bring to a boil.
- Put skewers and vegetable oil in a bag and shake to coat with oil.
- Air fry, then evenly coat both sides with sauce.

- Hard rice cakes should be briefly blanched in hot water or microwaved to soften before skewering to prevent breaking.
- A very small amount of beef dashi is essential to achieve the authentic umami flavor of a traditional street food stall.
