Okjubu's Mushroom Jelly

- mushrooms (enoki or shiitake) 2 handfuls
- perilla oil 1 tablespoon
- premium soy sauce (or brewed soy sauce) 1 tablespoon
- water 1.5 cups
- salt a pinch
- agar powder 1 tablespoon
- sesame sauce to taste
Recipe 🍳
- Cut the prepared mushrooms into thin slices or tear them into fine strips, not too large.
- Heat a pan with a small amount of perilla oil over medium heat and sauté the prepared mushrooms until soft and tender.
- Add premium soy sauce 1 tablespoon, water 1 cup, and a pinch of salt to the sautéed mushrooms and bring to a boil.
- In a separate cup, mix 1 tablespoon of agar powder with half a cup of water, stirring well to dissolve completely without lumps.
- Once the mushroom mixture comes to a boil, slowly pour in the prepared agar liquid while continuously stirring until the mixture thickens to a desired viscosity.
- Pour the thickened mixture into a square mold and smooth the surface. Chill in the refrigerator for 1–2 hours until firm.
- Slice into bite-sized pieces and serve with a tangy-sweet sesame sauce.
- Prepare mushrooms by slicing thinly or tearing into strips.
- Sauté mushrooms in a pan with perilla oil until soft, then add soy sauce, water, and salt and simmer briefly.
- Mix agar powder with water, then gradually stir it into the boiling mushroom mixture until thickened.
- Pour into a mold and chill in the refrigerator for 1–2 hours. Slice and serve with sesame sauce.
