Oh Se-deuk's Egg Curry Rice

A soft-boiled egg curry rice that can be made in just 5 minutes, infused with ginger and garlic flavors and topped with fresh chives.

Ingredients needed 🛒2 servings

  • 4 eggs
  • 1/2 onion
  • 1/2 green onion
  • half a handful of chives
  • 1 tbsp minced garlic
  • 1/3 tsp minced ginger
  • 1 cheongyang pepper
  • 3 tbsp curry powder
  • 1 cup (200ml) water
  • 2 bowls of rice
  • a pinch of salt

Recipe 🍳

  1. Add plenty of salt to boiling water, cook the eggs for exactly 5 minutes, then cool them in cold water and peel.
  2. Pat the boiled eggs completely dry with kitchen towels.
  3. Slice the onion, finely chop the green onion and cheongyang pepper, and cut the chives into bite-sized pieces.
  4. Add oil to a pan and sauté the sliced onion and green onion until softened and fragrant.
  5. When the onion turns golden, add the minced garlic, minced ginger, and cheongyang pepper (which burn easily) and stir-fry together.
  6. Add the curry powder and 1 cup of water, stir well to dissolve any lumps, and bring to a boil.
  7. When the curry sauce comes to a boil, add the prepared soft-boiled eggs and simmer gently until the sauce thickens slightly.
  8. Place warm rice in bowls, top with the curry and eggs, and finish with a generous amount of fresh chives.
  1. Boil eggs for 5 minutes, cool in cold water, peel, and slice the vegetables.
  2. Sauté onion, green onion, garlic, and ginger in a pan, then add curry powder and water and bring to a boil.
  3. Simmer the soft-boiled eggs in the curry, then serve over rice with chives.

Cooking tips 💡

  • Adding plenty of salt when boiling eggs not only makes them easier to peel but also lightly seasons the egg white.
  • Drying the eggs thoroughly ensures the curry sauce adheres well and doesn't slide off.
  • For extra richness, cut the soft-boiled eggs in half so the yolks melt into the curry sauce, then mix with the rice.
