Recipe 🍳
- Place green chili peppers and long green chilies in a dry pan without oil and roast until the outer surface turns slightly dark and golden brown.
- Let the roasted chilies cool slightly, then finely chop them using scissors or a knife until the texture is visible.
- In a bowl, add sugar, monosodium glutamate, and black pepper, then pour hot vegetable oil over to dissolve the powder seasoning smoothly.
- Add the chopped chilies, soy sauce, oyster sauce, and salt to the dissolved seasoning in the correct amounts, mixing thoroughly to complete the homemade chili sauce.
- Boil fresh noodles in water for the appropriate time, then rinse thoroughly under cold water to remove starchiness and squeeze out all moisture completely.
- Place the boiled noodles in a serving bowl, add the prepared chili sauce and sesame oil to taste, and mix well to combine.
- Roast the chilies in a dry pan without oil, then finely chop them.
- Pour hot oil over powdered seasonings, then mix in the remaining seasonings and chopped chilies to make the sauce.
- Mix the boiled and rinsed fresh noodles with the sauce and sesame oil to finish.
Cooking tips 💡
- For better flavor, let the finished chili sauce rest in the refrigerator for about a day—this softens the spiciness and deepens the sweetness.
- For added richness, slice pork belly thinly, sauté it, and serve alongside the noodles according to preference.
