🙋 Recommended for

  • Those who want to serve a generous, restaurant-quality Korean side dish at minimal cost
  • People seeking a spicy, savory stew that pairs perfectly with plain white rice when appetite is low

Ingredients needed 🛒3 servings

  • tofu 1 block (550g)
  • minced pork 100g
  • scallion 1 stalk
  • onion 0.5 medium
  • green chili peppers 3
  • mirin 1 tablespoon
  • sugar 1 tablespoon
  • minced garlic 1 tablespoon
  • soy sauce 3 tablespoons
  • oyster sauce 1 tablespoon
  • kangjang 1 tablespoon
  • minced ginger 0.5 teaspoon
  • red pepper powder 3 teaspoons
  • gochujang 1 tablespoon
  • water 600ml
  • vegetable oil as needed

Recipe 🍳

  1. Wipe the surface of the tofu lightly with a kitchen towel to remove moisture, then cut into thick slices about 1 cm thick, ideal for serving over rice.
  2. In a bowl, combine mirin 1 tablespoon, sugar 1 tablespoon, minced garlic 1 tablespoon, soy sauce 3 tablespoons, oyster sauce 1 tablespoon, kongjang 1 tablespoon, minced ginger 0.5 teaspoon, red pepper powder 3 teaspoons, and gochujang 1 tablespoon. Mix well to make the seasoning sauce.
  3. Chop the white parts of the scallion finely and slice the green parts diagonally. Slice the onion and chop the green chili peppers finely.
  4. Heat vegetable oil in a pot or deep skillet. Add the chopped white parts of the scallion and sauté over low heat, stirring gently to avoid burning, to extract the green onion oil.
  5. When the aroma of scallion fills the air, add the minced pork and break it apart with a spoon, cooking until evenly browned and fragrant. Transfer to a plate and set aside.
  6. Lightly clean the pan, add a small amount of oil, then place the sliced tofu in the pan and sear one side until golden brown.
  7. Place the cooked pork, sliced onion, and chopped green chili peppers evenly over the seared tofu.
  8. Pour in the prepared seasoning sauce and 600ml of water. Bring to a boil over medium-high heat, then reduce to a simmer and cook until the broth reduces to a desirable consistency and the flavors fully penetrate the tofu.
  9. Finally, sprinkle the sliced green parts of the scallion on top and gently simmer for a moment to finish.
  1. Cut tofu and vegetables to size, and mix all seasoning ingredients together to prepare the jjagglie sauce.
  2. Sauté minced pork in green onion oil until crisp and fragrant, and pan-sear the tofu on one side until golden.
  3. Layer the pork, vegetables, seasoning sauce, and water on the tofu, then simmer until the broth thickens and coats the ingredients perfectly.

Cooking tips 💡

  • Pre-searing one side of the tofu in oil prevents it from breaking during cooking while keeping the inside soft and tender.
  • Preparing the sauce ahead of time and letting it rest slightly allows the ingredients to meld, resulting in deeper, more balanced flavor.
  • For children, you can omit the green chili peppers or adjust the quantity to suit their taste.
  • You can substitute minced pork with leftover spam crushed into pieces or canned tuna drained of excess oil—both yield excellent results.
