1 tsp oyster sauce
1 tsp sugar

Recipe

Cut the tofu into thick, bite-sized pieces. Finely chop the scallions for garnish.
Heat cooking oil in a pot over low heat. Add the curry powder and stir-fry until fragrant, being careful not to burn it, to maximize its aroma.
Add the beef brisket to the stir-fried curry powder and cook together, allowing the meat's fat and curry aroma to meld naturally.
Once the meat is cooked, pour in the store-bought chicken broth and bring to a boil over high heat.
When the broth boils, add soy sauce, sake, oyster sauce, sugar, and salt in order to create a flavorful base.
Add the prepared tofu and simmer over medium-low heat, allowing the broth's seasoning to fully penetrate the tofu.
Once the tofu has absorbed the broth and become tender, turn off the heat and prepare for serving.
Serve neatly in a bowl and top with the chopped scallions for a fresh green color and invigorating aroma.

Stir-fry curry powder and beef brisket in a pan with cooking oil until fragrant.
Add chicken broth and seasonings, bring to a boil, then add tofu and simmer until seasoned.
Once the tofu is tender, serve in a bowl and garnish with chopped scallions.

Curry powder burns easily, so be sure to stir-fry it with oil over low heat to prevent a bitter taste.
If you prefer a stronger curry flavor, you can increase the curry powder to 1.5 tablespoons.
After adding the tofu, avoid stirring vigorously to prevent it from breaking. Instead, ladle the broth over the tofu as it simmers.
Scallions lose their vibrant color when exposed to heat, so add them only at the very end, after turning off the heat, for the best appearance.
