- This recipe intentionally uses a lot of oil to enhance shelf life, so not excessively reducing the amount of oil is the secret to long-term storage.
- When stored airtight in the refrigerator, the low temperature may cause the oil layer on top to solidify and turn white. However, when you eat it, the warmth of the bap or gently reheating it will melt it back to its original soft state, so you can rest assured.
- If you have dried shiitake mushrooms, rehydrate them in water, chop them, and add them to deepen the umami flavor significantly. It's also good to use a small amount of the mushroom soaking water during cooking.
