Ingredients needed 🛒2 servings
- chicken 400g
- scallions 1 handful
- vegetable oil 2~3 tablespoons
- chicken bouillon 1 tablespoon
- sugar 1/3 tablespoon
- boiled chicken broth 2 tablespoons
Recipe 🍳
- Boil the chicken in boiling water for about 15 minutes until fully cooked through.
- Check if the chicken is done by piercing it with a chopstick—ensure it goes in smoothly without any blood or juice coming out. Remove from heat, let cool slightly, and rest for a few minutes.
- Clean the scallions thoroughly and finely chop them.
- Heat 2 to 3 tablespoons of vegetable oil in a pan, add the chopped scallions, and sauté until fragrant.
- Once the scallion aroma rises, add 2 tablespoons of chicken broth from boiling the chicken, 1 tablespoon of chicken bouillon, and 1/3 tablespoon of sugar. Stir well and simmer briefly to finish the sauce.
- Slice the cooled chicken into bite-sized pieces, arrange on a serving plate, and generously pour the prepared scallion oil sauce over the top.
- Boil chicken in water for 15 minutes, remove, cool slightly, then slice into bite-sized pieces.
- Sauté scallions in oil, then add chicken broth, chicken bouillon, and sugar to make the sauce.
- Place sliced chicken on a plate and drizzle with scallion oil sauce to finish.
Cooking tips 💡
- Avoid slicing the chicken while it’s still hot, as the meat may fall apart easily—let it cool completely or until safe to touch before cutting.
- For enhanced presentation and flavor, briefly blanch lettuce, cabbage, or Chinese broccoli and lay them at the bottom of the plate before placing the chicken on top—this allows the sauce to soak into the greens for a more balanced bite.
- The scallion oil sauce effectively neutralizes any gamey odor in the chicken, preventing greasiness or heaviness while delivering a clean, refreshing taste.
