Cooking tips

  • Immediately after putting the meat in the oil, the batter may peel off, so leave it untouched for about 1 minute before separating any stuck pieces.
  • Depending on the moisture content of the pork, you may need less water for the batter, so do not pour it all at once; add it in portions while checking for a thick consistency.
  • Since the starch from the batter will also thicken the sauce, add the starch slurry in small amounts to prevent the sauce from becoming too thick.
  • Chili powder burns easily, so sauté it briefly over low heat just to release its aroma.
