Ttukdak Hyung's Garlic Butter Abalone Pot Rice

- 3-4 abalones
- 2 cups soaked rice
- 100g butter
- 3 tablespoons minced garlic
- 2 tablespoons olive oil
- 1 tablespoon parsley flakes
- 1 tablespoon Parmesan cheese powder (or two pinches of flavored salt)
- 1/2 minced onion
- 2 tablespoons cooking wine
- 1 tablespoon soup soy sauce
- a little chopped garlic chives
- a little chopped scallions
- 2 cups water
Recipe 🍳
- Heat olive oil in a pan, add minced garlic and stir-fry until golden brown without burning.
- In a bowl, combine the butter with the sautéed garlic, parsley flakes, and Parmesan cheese powder to make garlic butter.
- Blanch the abalones in boiling water, then remove the beak and separate the meat from the innards using scissors or a knife.
- Thinly slice the abalone meat.
- In a pot, add 1 tablespoon of garlic butter and the sliced abalone, quickly stir-fry over high heat, then set aside on a plate to preserve texture.
- In the same pot, add the abalone innards, minced onion, cooking wine, and soaked rice, and stir-fry until the innards are well coated on the rice.
- Pour in the water, cover the pot, and cook over medium-low heat for 10 minutes to steam the rice.
- After 10 minutes, turn off the heat and let it rest covered for 10 minutes.
- Once rested, top the rice with garlic chives, scallions, the pre-cooked abalone slices, and a pat of garlic butter. Mix well and serve.
- Mix sautéed garlic, butter, parsley, and Parmesan cheese powder to make garlic butter.
- Prepare blanched abalone: sauté meat in garlic butter and set aside; stir-fry innards with onion and rice.
- Add water, cook for 10 minutes, then rest for 10 minutes. Top with garlic chives, scallions, abalone meat, and garlic butter, then mix.
Cooking tips 💡
- If you don't have Parmesan cheese powder for the garlic butter, you can substitute it with two pinches of flavored salt to adjust the seasoning.
- If you cook the abalone meat in the pot from the start, it becomes tough, so lightly sauté it and add it as a garnish at the end.
- The finished pot rice pairs well with light side dishes. If the flavor is too mild, add a spoonful of seasoned soy sauce and mix.
