  • Radish: 200g
  • Green onion: 100g
  • Chili pepper: 20g
  • Whole peppercorns: 7g
  • Bay leaf: 1g
  • Salt: 2 tablespoons
  • Beef Dashida: 1 tablespoon
  • Beef short rib meat: 1.2kg
  • Meat boiling broth: 50ml
  • Onion: 90g
  • Red chili pepper: 10g
  • Soy sauce: 50ml
  • Gochugaru (chili powder): 3 tablespoons
  • Vinegar: 3 tablespoons
  • Sugar: 2 tablespoons
  • Minced garlic: 2 tablespoons
  • Somen noodles
  • Meat boiling broth
  • Egg garnish
  • Boiled beef short rib meat

Recipe 🍳

  1. Prepare the beef short rib meat. Cut the short rib meat along the center line. Prepare the short rib meat for suyuk, excluding the portion for stew.
  2. Boil the beef short rib meat. Add water to the pot. Add radish to the pot. Add green onion to the pot. Add chili pepper to the pot. Add whole peppercorns to the pot. Add bay leaf to the pot. Add salt to the pot. Add beef Dashida to the pot. Add beef short rib meat to the pot. Boil for one hour. Skim off any foam that rises to the surface with a spoon. Remove the beef short rib meat and slice it thinly.
  3. Make the sauce. Add the meat boiling broth to a bowl. Add onion to the bowl. Add chili pepper to the bowl. Add red chili pepper to the bowl. Add soy sauce to the bowl. Add gochugaru to the bowl. Add vinegar to the bowl. Add sugar to the bowl. Add minced garlic to the bowl. Mix all ingredients well. Transfer the sauce to a dish.
  4. Steam the suyuk to complete. Place all mushrooms in the steamer. Place napa cabbage in the steamer next. Place chives in the steamer. Place the sliced beef short rib meat in the steamer. Close the lid and steam.
  5. Make beef noodle soup. Pour broth over the boiled somen noodles. Place egg garnish on top of the somen noodles. Place beef short rib meat on top of the somen noodles. Complete the beef noodle soup.
