  • If you don’t drain the moisture from the soft tofu beforehand, excess water will keep leaking out during cooking, resulting in a diluted and bland broth.
  • When sautéing chili powder and soy sauce directly in oil, they burn very easily—always use medium heat or lower and stir constantly to avoid burning.
  • Do not forcefully pull apart the udon noodles in the pot—this causes them to break. Instead, let them naturally loosen in the hot broth by gently tapping the surface with chopsticks.
  • After eating the noodles, enjoy the remaining thick, spicy, savory broth by mixing in rice for a perfect second meal of sundubu stew.
