Striker Chef's Super Simple Egg Noodle Stir-fry

Ingredients needed 🛒3 servings
- Egg noodles (or instant ramen noodles) 3 servings
- Leek, generously
- Minced garlic 5 tbsp
- Cooking oil 3 tbsp
- Water, to taste
- Sugar, to taste
- Soy sauce (Guk-ganjang) to taste
- Sesame oil 3 drizzles
- Pepper, generously
- Scallion, generously
Recipe 🍳
- Heat 3 tbsp of cooking oil in a pan and add roughly chopped leeks. Sauté over medium heat until wilted.
- Boil water in a pot and cook the egg noodles for 1 minute less than the package instructions (about 4 minutes). Drain in a colander.
- Once the leeks are half-wilted and translucent, add 5 tbsp of minced garlic and slowly sauté over medium-low heat until fragrant, being careful not to burn.
- When the garlic aroma is released, increase the heat to high, add soy sauce, sugar, and water, and bring to a boil to create the sauce.
- Add the cooked egg noodles to the sauce and stir-fry until the sauce is fully absorbed by the noodles.
- Once the sauce has reduced and is completely absorbed by the noodles, turn off the heat. Add 3 drizzles of sesame oil and a generous amount of pepper, then mix well.
- Serve attractively in a bowl and garnish generously with finely chopped scallions.
- Sauté leeks in oil until wilted.
- Boil egg noodles for 4 minutes and drain.
- Add minced garlic to the leeks and sauté, then add soy sauce, sugar, and water to make the sauce.
- Add noodles and stir-fry until the sauce reduces, then finish with sesame oil, pepper, and scallions.
Cooking tips 💡
- Cooking the noodles 1 minute less than recommended and then stir-frying them in the sauce prevents them from becoming mushy and allows the seasoning to penetrate better.
- The key is to slowly extract the garlic aroma over medium-low heat, as high heat can easily burn the garlic.
- You can add chili flakes or chopped chili peppers for a spicy kick, according to your preference.
