- egg noodles 3 servings
- thin pork belly 200g
- green onions 1 handful
- onion 0.5
- scallions 1 stalk
- red chili 1
- chili oil 2 tablespoons
- vegetable oil 2 tablespoons
- soy sauce 1 tablespoon
- oyster sauce 1.5 tablespoons
- doubanjiang 0.5 tablespoon
- sugar 1 teaspoon
- cilantro a pinch
Recipe 🍳
- Cut green onions into bite-sized pieces, slice onion into large chunks, and finely chop scallions and red chili. Cut pork belly into bite-sized pieces as well.
- Boil egg noodles in water and cook for about 5 minutes until just cooked through but still firm. Drain and rinse under cold water to remove excess moisture.
- Heat oil generously in a pan and sauté green onions until fragrant, then remove and set aside.
- Add 2 tablespoons chili oil and 2 tablespoons vegetable oil to the same pan, then sauté scallions to release their aroma before adding pork belly and cooking until browned.
- Once the pork belly is slightly cooked, add the reserved green onions and onion, and stir-fry together.
- Add soy sauce 1 tablespoon, oyster sauce 1.5 tablespoons, doubanjiang 0.5 tablespoon, and sugar 1 teaspoon one by one, stirring continuously to allow the seasonings to meld and reduce slightly.
- Add the boiled egg noodles and red chili, then stir-fry over high heat for a final quick toss. Garnish with cilantro to taste.
- Chop vegetables and pork belly into bite-sized pieces.
- Cook egg noodles for 5 minutes, then rinse under cold water.
