  • egg noodles 3 servings
  • thin pork belly 200g
  • green onions 1 handful
  • onion 0.5
  • scallions 1 stalk
  • red chili 1
  • chili oil 2 tablespoons
  • vegetable oil 2 tablespoons
  • soy sauce 1 tablespoon
  • oyster sauce 1.5 tablespoons
  • doubanjiang 0.5 tablespoon
  • sugar 1 teaspoon
  • cilantro a pinch

Recipe 🍳

  1. Cut green onions into bite-sized pieces, slice onion into large chunks, and finely chop scallions and red chili. Cut pork belly into bite-sized pieces as well.
  2. Boil egg noodles in water and cook for about 5 minutes until just cooked through but still firm. Drain and rinse under cold water to remove excess moisture.
  3. Heat oil generously in a pan and sauté green onions until fragrant, then remove and set aside.
  4. Add 2 tablespoons chili oil and 2 tablespoons vegetable oil to the same pan, then sauté scallions to release their aroma before adding pork belly and cooking until browned.
  5. Once the pork belly is slightly cooked, add the reserved green onions and onion, and stir-fry together.
  6. Add soy sauce 1 tablespoon, oyster sauce 1.5 tablespoons, doubanjiang 0.5 tablespoon, and sugar 1 teaspoon one by one, stirring continuously to allow the seasonings to meld and reduce slightly.
  7. Add the boiled egg noodles and red chili, then stir-fry over high heat for a final quick toss. Garnish with cilantro to taste.

  2. Cook egg noodles for 5 minutes, then rinse under cold water.
  3. Sauté green onions first in oil until fragrant, then set aside.
  4. Sauté scallions and chili oil with pork belly, then add vegetables and reserved green onions.
  5. Add doubanjiang, oyster sauce, and other seasonings, then mix in noodles and red chili to finish.
