- 4-6 lamb chops
- Plenty of olive oil
- Salt to taste
- Pepper to taste
- 1-2 red onions
- 1 tbsp butter
- 100ml balsamic vinegar
- 3 tbsp palm sugar (or sugar)
- A little Italian parsley
Recipe 🍳
- Lightly pat the lamb chops dry and score the fatty parts in a crosshatch pattern.
- Generously season both sides with salt and pepper.
- Add enough olive oil to a pan and heat over high heat. Place the lamb chops in order, starting with the thickest ones, and sear until golden brown on both sides, cooking to medium. Remove and let rest.
- In the same pan used for the lamb, add sliced red onions and sauté until brown. Add butter to enhance the flavor.
- Add balsamic vinegar and palm sugar (or sugar) and reduce over medium-low heat until the sauce thickens.
- Turn off the heat, mix in roughly chopped Italian parsley, then spread the sauce on the bottom of a plate and arrange the lamb chops on top to finish.
- Score the lamb chops and season with salt and pepper.
- Sear the lamb chops in a pan with olive oil until golden brown and let them rest.
- Make the sauce in the same pan with onions, butter, balsamic vinegar, and sugar.
- Mix parsley into the sauce, then plate with the lamb chops.
