Recipe 🍳

  3. Trim the base of the bok choy, separate the leaves, and wash thoroughly.
  4. Heat a generous amount of oil in a pan over high heat. Pour in the egg mixture and stir gently with chopsticks to form soft scrambled eggs. Transfer to a plate and set aside.
  5. In the same pan, add more oil if needed and stir-fry the tomato chunks until the skin softens slightly.
  6. Add 1 tbsp oyster sauce, 1/3 tbsp soy sauce, a pinch of black pepper, and 1 tbsp ketchup to the tomatoes. Stir-fry until the seasonings are well combined.
  7. Once the seasonings are incorporated, add the bok choy and stir-fry until slightly wilted.
  8. Finally, return the scrambled eggs to the pan and gently toss everything together until just combined. Serve immediately.
