Solo Cooking God's Tomato Egg Stir-fry

- 3 eggs
- 1 tomato (or cherry tomatoes)
- 1 bok choy (or chives)
- 1 pinch of salt
- 1 tbsp oyster sauce
- 1/3 tbsp soy sauce
- 1 tbsp ketchup
- A pinch of black pepper
- Generous amount of cooking oil
Recipe 🍳
- Crack 3 eggs into a bowl, add a pinch of salt, and beat well with chopsticks.
- Remove the core of the tomato and cut into bite-sized chunks.
- Trim the base of the bok choy, separate the leaves, and wash thoroughly.
- Heat a generous amount of oil in a pan over high heat. Pour in the egg mixture and stir gently with chopsticks to form soft scrambled eggs. Transfer to a plate and set aside.
- In the same pan, add more oil if needed and stir-fry the tomato chunks until the skin softens slightly.
- Add 1 tbsp oyster sauce, 1/3 tbsp soy sauce, a pinch of black pepper, and 1 tbsp ketchup to the tomatoes. Stir-fry until the seasonings are well combined.
- Once the seasonings are incorporated, add the bok choy and stir-fry until slightly wilted.
- Finally, return the scrambled eggs to the pan and gently toss everything together until just combined. Serve immediately.
- Beat eggs with salt; cut tomato and bok choy into bite-size pieces.
- Heat oil, scramble eggs, and set aside.
- Stir-fry tomatoes with seasonings, then add bok choy and eggs; quickly toss to finish.

- For soft scrambled eggs, remove them from the pan while still slightly undercooked (about 80% done); the residual heat will finish cooking them, keeping them tender.
- If using cherry tomatoes instead of regular ones, cut them in half for easier cooking.
