Solo Cooking God's Super Simple Japchae

- dangmyeon (glass noodles), 1 handful
- soybean sprouts, 1 handful
- square fish cake, 2 sheets
- green onion (green part), as needed
- dark soy sauce, 2 tablespoons
- oyster sauce, 2 tablespoons
- sugar, 2 tablespoons
- minced garlic, 1 tablespoon
- black pepper, a pinch
- vegetable oil, 2 tablespoons
- sesame oil, 1 tablespoon
- toasted sesame seeds, generously
Recipe 🍳
- Place a handful of dangmyeon noodles in a cold pan, then add enough water to fully submerge them.
- Turn on the heat and once the water comes to a boil, continue boiling for 3–4 minutes until the noodles are soft.
- When the noodles are cooked, drain most of the starchy water, leaving about 6 tablespoons in the pan.
- On top of the cooked noodles, add a handful of washed soybean sprouts, 2 sheets of rectangular fish cake cut into long strips, and coarsely chopped green parts of green onion.
- Add 2 tablespoons dark soy sauce, 2 tablespoons oyster sauce, 2 tablespoons sugar, 1 tablespoon minced garlic, a pinch of black pepper, and 2 tablespoons vegetable oil in order.
- Stir-fry over medium heat for 1–2 minutes until the ingredients wilt and the seasonings are evenly distributed.
- Turn off the heat, drizzle 1 tablespoon of sesame oil, toss lightly, transfer to a plate, and sprinkle generously with toasted sesame seeds.
- In a pan, combine the dangmyeon noodles with water and boil from cold for 3–4 minutes, then drain, leaving a small amount of water.
- Add the prepared fish cake, green onion, and soybean sprouts along with soy sauce, oyster sauce, sugar, and other seasonings, then stir-fry for 1–2 minutes.
- Turn off the heat, finish with sesame oil and toasted sesame seeds for a nutty aroma.

- Starting the dangmyeon in cold water and bringing it to a boil gradually heats the noodles, which significantly reduces cooking time even without pre-soaking.
- Feel free to substitute green onion with any green vegetables you have at home, such as chives or spinach.
