Ttukdak Hyung's Super Simple Japchae

A super simple one-pan japchae recipe where you soak dangmyeon in lukewarm water instead of boiling them separately, then quickly stir-fry with vegetables and sauce in a single pan until the liquid evaporates.

  • bell pepper, 1/2
  • seasoned salt, a little

  • water, a little
  • jin ganjang, appropriate amount
  • oyster sauce, appropriate amount
  • sugar, a little
  • minced garlic, appropriate amount
  • sesame oil, generously
  • sesame seeds, a little

Recipe 🍳

  1. Soak the dangmyeon in lukewarm water at least 30 minutes before cooking, until they become soft and no longer stiff.
  2. Cut carrot, onion, and bell pepper into thin strips of similar thickness for even cooking.
  3. Heat oil in a pan, add the sliced carrot, onion, and bell pepper. Season lightly with seasoned salt and pepper, and stir-fry quickly over medium-high heat.
  4. When the onion turns translucent and the vegetables have wilted slightly, add a little water to the pan and add the pre-soaked dangmyeon.
  5. Directly measure and add jin ganjang, oyster sauce, sugar, and minced garlic over the dangmyeon in the pan.
  6. Turn the heat to high and continuously stir-fry until the sauce is absorbed into the noodles and the liquid at the bottom of the pan has completely evaporated.
  7. Once the liquid is gone and the noodles are chewy and glossy, turn off the heat completely.
  8. With the heat off, generously drizzle sesame oil over the noodles, sprinkle sesame seeds, and toss gently using residual heat. Transfer to a serving plate.

Cooking tips 💡

  • The key is to soak the dangmyeon thoroughly in lukewarm water beforehand. If you add them unsoaked, they won't cook properly; soaking allows you to skip boiling.
  • By stir-frying all vegetables together rather than separately, you reduce oil usage and calories, and minimize cooking and cleanup.
  • Add sesame oil only at the very end with the heat turned off to prevent its aroma from dissipating during heating.
