A super simple one-pan japchae recipe where you soak dangmyeon in lukewarm water instead of boiling them separately, then quickly stir-fry with vegetables and sauce in a single pan until the liquid evaporates.

- dangmyeon, appropriate amount
- carrot, a little
- onion, 1/2
- bell pepper, 1/2
- seasoned salt, a little

- jin ganjang, appropriate amount
- oyster sauce, appropriate amount
- sugar, a little
- minced garlic, appropriate amount
- sesame oil, generously
- sesame seeds, a little
Recipe 🍳
- Soak the dangmyeon in lukewarm water at least 30 minutes before cooking, until they become soft and no longer stiff.
- Cut carrot, onion, and bell pepper into thin strips of similar thickness for even cooking.
- Heat oil in a pan, add the sliced carrot, onion, and bell pepper. Season lightly with seasoned salt and pepper, and stir-fry quickly over medium-high heat.
- When the onion turns translucent and the vegetables have wilted slightly, add a little water to the pan and add the pre-soaked dangmyeon.
- Directly measure and add jin ganjang, oyster sauce, sugar, and minced garlic over the dangmyeon in the pan.
- Turn the heat to high and continuously stir-fry until the sauce is absorbed into the noodles and the liquid at the bottom of the pan has completely evaporated.
- Once the liquid is gone and the noodles are chewy and glossy, turn off the heat completely.
- With the heat off, generously drizzle sesame oil over the noodles, sprinkle sesame seeds, and toss gently using residual heat. Transfer to a serving plate.
- Soak dangmyeon in lukewarm water. Cut carrot, onion, and bell pepper into thin strips.
- In a pan, stir-fry the vegetables with salt and pepper until translucent. Add water, soaked dangmyeon, and the seasoning (soy sauce, oyster sauce, sugar, minced garlic).
- Stir-fry quickly over high heat until the liquid evaporates completely. Turn off the heat and mix in sesame oil and sesame seeds.
Cooking tips 💡
- The key is to soak the dangmyeon thoroughly in lukewarm water beforehand. If you add them unsoaked, they won't cook properly; soaking allows you to skip boiling.
- By stir-frying all vegetables together rather than separately, you reduce oil usage and calories, and minimize cooking and cleanup.
- Add sesame oil only at the very end with the heat turned off to prevent its aroma from dissipating during heating.
