- 2 tbsp buldak sauce
- 2 tbsp tonkatsu sauce
- 2 tbsp water
- a pinch of dried parsley

- Lightly oil a pan, crack in 2 eggs, and scramble them loosely until just set but still moist. Set aside.
- Slice the thinly sliced pork belly into bite-sized pieces and julienne the onion.
- In the same pan, add the pork belly and onion and stir-fry together.
- When the pork belly is lightly browned and the onion turns translucent, reduce the heat to low.
- Add 2 tbsp buldak sauce, 2 tbsp tonkatsu sauce, and 2 tbsp water, then stir-fry until everything is well coated with the sauce.
- Place a serving of warm rice in a bowl and top with the stir-fried spicy pork belly.
- Garnish with the reserved scrambled eggs and sprinkle with dried parsley.
- Scramble the eggs and set aside.
- In a pan, stir-fry the pork belly and onion strips, then add buldak sauce, tonkatsu sauce, and water, and simmer until thickened.
- Serve the stir-fried pork belly and scrambled eggs over rice, and add mayonnaise to taste.
Cooking tips 💡
- Besides thinly sliced pork belly, you can also use chicken thigh fillets or sliced beef for bulgogi.
- If the spiciness is too strong, drizzle on a little mayonnaise at the end to mellow the heat.
- Once you add the sauce, it can burn easily, so make sure to stir-fry quickly over low heat.
