Recipe

Peel the potatoes, then steam them in a steamer without boiling in water until they are fluffy and dry.
Grate the Gruyère cheese and mozzarella cheese, excluding the hard ends of the Gruyère cheese.
Mash the cooked potatoes finely using a garlic press or a masher until they are smooth and fine-grained.
Place the mashed potatoes over low heat, add heavy cream and butter, and stir well until the butter melts.
Once the butter and cream have melted, gradually add the grated cheese and mix.
As the cheese melts, stir in one direction continuously, pressing against the bottom of the pan to prevent sticking, to enhance the potato's elasticity.
Stir sufficiently until the potatoes become firm and smooth with a velvety texture, stretching long like cheese.

Peel and steam potatoes, then mash them finely.
Over low heat, add heavy cream and butter to the mashed potatoes and mix until melted.
Gradually add grated cheese and keep stirring until it reaches a stretchy, velvety texture.
