- minced pork 150g
- onion 1 large
- garlic 2 cloves
- fried soybean paste 2 tablespoons
- oyster sauce 1 tablespoon
- soy sauce 1 tablespoon
- sugar 0.5 tablespoon
- water starch a little
- vegetable oil 4 tablespoons
- noodles 2 servings
- eggs 2
Recipe 🍳
- Finely chop the onion and garlic.
- Heat vegetable oil generously in a pan and thoroughly cook the minced pork until golden brown.
- Add soy sauce to enhance the aroma, then add the chopped onion and garlic, and stir-fry together.
- Add fried soybean paste and stir well until fully incorporated; if needed, add a small amount of water to loosen if not mixing smoothly.
- Add oyster sauce and sugar to adjust seasoning, then gradually add water starch to reach a thick consistency.
- Pour the finished jjajang sauce over boiled noodles, top with fried scrambled eggs cooked like a pancake, and serve.
- Finely chop onion and garlic, and prepare boiling noodles.
- Sauté minced pork in oil until golden, then add soy sauce, onion, garlic, and fried soybean paste.
- Season with oyster sauce and sugar, adjust thickness with water starch, then serve over noodles with fried egg on top.
Cooking tips 💡
- Using pre-fried soybean paste instead of regular soybean paste makes the cooking process much easier.
- Cooking the pork until nicely browned triggers the Maillard reaction, greatly enhancing the umami depth of the sauce.
- When adding water starch, do so gradually in small amounts to avoid clumping and achieve the desired consistency.
