- shiitake mushroom 1 pack
- onion 1/4
- egg 1
- rice 1 bowl
- tsuyu 2 tablespoons
- water 7 tablespoons
- sugar 0.5 tablespoon
- mirin 1 tablespoon
- green onion a little
Recipe 🍳
- Trim the stems off the shiitake mushrooms and tear them into bite-sized pieces.
- Slice the onion thinly and lightly beat the egg in a bowl.
- In a pan, combine the specified amount of tsuyu, water, sugar, and mirin, and bring the sauce to a boil.
- Once the sauce begins to bubble, add the sliced onion and shiitake mushrooms, and cook until the vegetables are tender.
- When the ingredients soften, slowly pour the beaten egg in a circular motion, then turn off the heat and use residual heat to achieve a soft-scrambled, semi-set texture.
- Place warm rice in a bowl, top with the entire cooked mixture, and garnish with finely chopped green onion.
- Chop the shiitake mushrooms and onion, and beat the egg.
- Boil the tsuyu sauce in a pan, then add the onion and shiitake mushrooms and cook through.
- Pour in the egg mixture, cook briefly, then place on top of rice and sprinkle with green onion to finish.
Cooking tips 💡
- Turn off the heat immediately after pouring in the egg mixture—avoid fully cooking it so you can enjoy a much softer, moist texture.
- If tsuyu is unavailable, substitute with a mix of soy sauce, sake, and honey in appropriate proportions.
