- enoki mushrooms 1 pack
- eggs 2~3
- vegetable oil 3 tablespoons
- salt 1 pinch
- green chili peppers 2
- red chili peppers 1
Recipe 🍳
- Keep the enoki mushrooms in their original packaging, trimming only the dirty stems cleanly—do not wash them with water.
- In a bowl, crack 2 to 3 eggs and mix in 1 pinch of salt, gently stirring until the egg whites are fully dissolved to create a smooth egg mixture.
- Prepare the green and red chili peppers for garnish by finely chopping them into thin strips.
- On a cold skillet, carefully tear the enoki mushrooms into strands and spread them out evenly in a beautiful fan shape.
- Turn on the heat, pour 3 tablespoons of vegetable oil evenly across the pan surface, then reduce to medium heat once sizzling begins.
- Pour the prepared egg mixture evenly over the mushrooms, ensuring full coverage, then gently shake the pan to help the egg mixture seep into the spaces between the mushrooms and reach the bottom.
- Sprinkle the chopped green and red chilies on top, then flip the fritter once the bottom side is firm and cooked through, continuing to cook the other side until golden brown.
- Trim the stems of the enoki mushrooms and prepare the egg mixture with salt.
- Finely chop the green and red chili peppers.
- Tear the enoki mushrooms and lay them out in a fan shape on the pan.
- Add oil and heat over medium flame, then pour the egg mixture evenly.
- Top with the chopped chilies and cook both sides until golden brown.

- Enoki mushrooms lose their signature crisp texture when they absorb water, so it’s best to use them as-is without washing.
- If flipping the fritter is difficult, place a flat plate slightly larger than the pan on top of it, invert the pan, transfer the fritter onto the plate, then gently slide it back into the pan—this prevents tearing and keeps it neat.
