- brewed soy sauce (or thick soy sauce) 2 tablespoons
- mirin 2 tablespoons
- sugar 1 tablespoon
- sesame seeds to taste

- Mix together 2 tablespoons brewed soy sauce, 2 tablespoons mirin, 1 tablespoon sugar, sesame seeds, fresh mustard, and 1 tablespoon sesame oil to make the seasoning sauce.
- Blanch the squid in boiling water until it develops a firm, chewy texture.
- Immediately transfer the blanched squid to cold water to cool, then drain thoroughly and cut into bite-sized pieces.
- Place the cut squid in a serving bowl, pour the prepared sauce evenly over it, and sprinkle with sesame seeds before serving.
- Combine all seasoning ingredients to make the soy sauce dressing.
- Blanch the squid briefly in boiling water, then cool immediately in cold water.
- Toss the cut squid with the sauce and finish with a sprinkle of sesame seeds.
