  • Salt (for pickling cucumber) a little
  • Green onion, 1/3 stalk
  • Soy sauce, 2 tablespoons
  • Anchovy sauce, 1 tablespoon
  • Minced garlic, 1 tablespoon
  • Sugar, 0.5 tablespoon
  • Gochugaru, 2 tablespoons
  • Oligosaccharide syrup, 1 tablespoon
  • Sesame oil, 1 tablespoon

  1. Slice the fish cake thickly to preserve texture, then warm it in the microwave for about 20 seconds.
  2. Thinly slice the cucumber, lightly salt it, then squeeze out as much water as possible by hand.
  3. In a bowl, combine 2 tablespoons soy sauce, 1 tablespoon anchovy sauce, 1 tablespoon minced garlic, 0.5 tablespoon sugar, 2 tablespoons gochugaru, and 1 tablespoon oligosaccharide syrup to make the seasoning sauce.
  4. Add the prepared fish cake, squeezed cucumber, and chopped green onion to the bowl with the seasoning sauce.
  5. Gently mix by hand until the ingredients are evenly coated with seasoning.
  6. Finally, drizzle 1 tablespoon sesame oil for a nutty aroma and lightly toss to finish.

  2. Thinly slice cucumber, salt, and squeeze out water.
  3. Mix soy sauce, anchovy sauce, garlic, sugar, gochugaru, and oligosaccharide syrup to make seasoning.
  4. Combine fish cake, cucumber, and green onion with seasoning, then finish with sesame oil.

Cooking tips 💡

  • For the seasoned side dish, squeeze out as much moisture from the cucumber as possible to prevent the seasoning from diluting and to keep it crunchy even after time.
  • If the fish cake is sliced too thinly, it may get overshadowed by the cucumber's strong crunch, so it's better to keep the fish cake slices slightly thick.
