Lim Sung-geun's Mountain-style Skewers

A neat, elegant holiday dish featuring ham mountain-style skewers that preserve the natural vibrant colors of the ingredients by lightly dusting only one side with flour.

🙋 Recommended for

  • Those who want to make colorful, neatly arranged mountain-style skewers perfect for holidays
  • Those struggling with egg wash peeling off or burning when frying

Ingredients needed 🛒3 servings

  • Appropriate amount of kim bap-style pickled radish
  • Appropriate amount of spicy dried fish cake
  • Appropriate amount of kim bap-style ham
  • Appropriate amount of green onion
  • Several eggs
  • Appropriate amount of flour
  • Generous amount of cooking oil

Recipe 🍳

  1. Rinse the kim bap-style pickled radish briefly under running water to remove strong sweetness, sourness, and artificial coloring.
  2. Cut the spicy dried fish cake lengthwise into long strips, and cut the ham and green onion to match the length of the pickled radish.
  3. Thread the skewers in this order: white part of green onion, pickled radish, ham, spicy dried fish cake, and finally the green part of the green onion, creating a long, alternating pattern.
  4. Whisk the egg thoroughly until well blended, but do not add salt—adding salt causes the egg mixture to spoil and prevents it from adhering properly.
  5. Heat a pan over medium heat and add a generous amount of cooking oil.
  6. Dust only the bottom side of the mountain-style skewers with flour, then coat them evenly with egg wash and place them in the pan. Do not dust the top side where the red spicy dried fish cake is visible.
  7. Adjust the heat between medium and high to cook both sides evenly until golden brown.
  8. After cooking, place the skewers on kitchen paper to absorb excess oil, then cool slightly and slice into three equal portions for serving.
  1. Rinse the pickled radish and cut the spicy dried fish cake, ham, and green onion into uniform lengths.
  2. Thread the prepared ingredients onto the skewers in sequence, forming a long alternating pattern.
  3. Whisk the eggs without adding salt and heat a generous amount of oil in the pan.
  4. Dust only the bottom side of the skewers with flour, then coat with egg wash and cook.
  5. Cook until golden brown, then slice into three equal portions for serving.

Cooking tips 💡

  • Do not add salt to the egg wash when frying, as it causes the egg to spoil and prevents proper adhesion to the ingredients.
  • Avoid coating both sides of the skewers with flour, as it dulls the vibrant colors of the ingredients. Only dust one side to maintain a clean, bright finish.
  • Use plenty of oil when frying—too little oil can cause burning, so ensure adequate oil and adjust heat accordingly.
