Ingredients needed 🛒2 servings
- spicy chicken ramen 2 packs (including liquid seasoning)
- whole garlic 4 cloves
- chili powder 1 tablespoon
- chili oil 3 tablespoons
- peanut butter 1 tablespoon
- convenience store chicken breast 1 pack
- green chili peppers 2
- sugar 0.5 tablespoon
- noodle water 2 ladles
Recipe 🍳
- Bring a pot of water to a boil and cook the noodles from 2 packs of spicy chicken ramen for exactly 3 minutes. Remove and set aside. Do not discard the starchy noodle water—set it aside separately.
- Slice the 4 cloves of whole garlic thinly, and finely chop the 2 green chili peppers.
- In a wok or pan, add the cooked noodles, 1 ladle of noodle water, sliced garlic, and the liquid seasoning from 2 packs of spicy chicken ramen.
- Add the chili powder 1 tablespoon, chili oil 3 tablespoons, and peanut butter 1 tablespoon one at a time.
- Turn on the heat and stir-fry until the peanut butter fully melts and blends smoothly into the noodles and seasonings.
- Tear the convenience store chicken breast into bite-sized pieces and add it along with the chopped green chili peppers and sugar 0.5 tablespoon.
- Gradually add the remaining 1 ladle of reserved noodle water while continuously stir-frying until the sauce is fully absorbed into the noodles and the dish is dry and well-coated.
- Cook spicy chicken ramen noodles for 3 minutes, drain, and reserve the noodle water.
- In a wok, combine noodles, 1 ladle of noodle water, sliced garlic, liquid seasoning, chili powder, chili oil, and peanut butter; stir-fry.
- Add chicken breast, chopped green chili peppers, sugar, and remaining noodle water; stir-fry until sauce is evenly distributed and fully absorbed.
Cooking tips 💡
- Boil the noodles for only 3 minutes initially so they remain firm and chewy when stir-fried later—preventing them from becoming mushy.
- Peanut butter softens the spiciness while adding a deep, rich, nutty flavor. For extra heat, add more green chili peppers at the end.
- When cooking, if any seasoning sticks to the edges of the pan, add a splash of noodle water to loosen it and mix it back into the noodles for a clean, even coating.
