- Ground beef sirloin 400g
- Traditional doenjang 500g
- Toasted sesame oil 3 tablespoons
- Minced garlic 4 tablespoons
- Cooking wine 1/2 cup
- Minced ginger 1–2 tablespoons
- Sugar 2 teaspoons
- Tuna sauce to taste
Recipe 🍳
- In a non-heated pan, add 3 tablespoons of toasted sesame oil and ground beef, then stir-fry to remove any off-flavors.
- Once the beef is partially cooked, add 500g of traditional doenjang and stir-fry together with the meat to enhance the savory depth.
- Reduce heat to low, then add 4 tablespoons of minced garlic, 1/2 cup of cooking wine, and minced ginger, and continue stirring to blend flavors.
- Add a small amount of sugar to balance the bitterness of the doenjang and boost umami richness.
- Strengthen the final flavor with tuna sauce, then cook until moisture evaporates and the mixture becomes dry and slightly thickened.
- Cool completely before transferring to an airtight container for refrigeration.
- Stir-fry toasted sesame oil and ground beef in a pan.
- Add traditional doenjang and stir-fry with the beef.
- Add garlic, cooking wine, ginger, sugar, and tuna sauce, then simmer and stir until fully blended.
Cooking tips 💡
- Adding ginger to doenjang dishes helps reduce the heavy, pungent aroma typical of doenjang.
- Due to the beef fat, the mixture may harden when refrigerated—when using, take out only what you need and mix with a little water or cooking wine to loosen.
- Use this seasoning as a base for various dishes such as doenjang stew, soup, grilled tofu, seasoned vegetables, and perilla leaf steamed rolls.
