Lee Yeon-bok's Microwave Dakbokkeumtang

Ingredients needed 🛒2 servings
- Chicken (cut into pieces, or thighs/breast) 1 whole chicken
- Cooking wine 1 tbsp
- Potato 1
- Carrot 1/2
- Onion 1/3
- Green onion 1 stalk
- Minced garlic 1 tbsp
- Soy sauce 3 tbsp
- Gochugaru 1 tbsp
- Gochujang 2 tbsp
- Chicken stock 1/2 tbsp
Recipe 🍳
- Cut the chicken into bite-sized pieces, remove any small bones, and trim. If using chicken breast, slice it thinly so it cooks evenly.
- Add 1 tbsp of cooking wine to the prepared chicken and mix well to remove any gamey smell.
- Cut potato, carrot, and onion into bite-sized cubes. Slice the green onion into suitable lengths and prepare together with the minced garlic.
- In a microwave-safe bowl, add the prepared vegetables and chicken. Add 2 tbsp soy sauce, 1 tbsp gochugaru, 2 tbsp gochujang, and 1/2 tbsp chicken stock. Mix well so the seasoning coats everything.
- Cover the bowl with plastic wrap and microwave at 800W for 10 minutes.
- Remove, flip the contents to mix the seasoning evenly, re-cover with plastic wrap, and microwave for another 10 minutes.
- Taste and adjust saltiness by adding 1 tbsp more soy sauce if needed. Microwave for an additional 5 minutes until the potatoes are tender and done.
- Cut chicken and vegetables into bite-sized pieces.
- Mix chicken with cooking wine to remove odor.
- Combine all ingredients and seasonings in a bowl and mix well.
- Cover with plastic wrap and microwave for 10 minutes, then another 10 minutes.
- Add 1 tbsp soy sauce and microwave for 5 more minutes to finish.
