Recipe

In a bowl, beat 1 whole egg and 1 egg yolk, then add 3 tablespoons of grated Grana Padano cheese and coarsely ground black pepper. Mix well and set aside.
Cut the bacon into bite-sized pieces.
Bring a pot of water to a boil, add salt, and cook the spaghetti 1–2 minutes less than the package instructions.
Place the bacon in a cold pan and cook over low heat, rendering the fat until the bacon becomes crispy.
Add the cooked spaghetti and 1 ladle of pasta water to the pan with the bacon. Stir well to emulsify, then turn off the heat.
Let the pan cool slightly, then pour in the egg and cheese mixture. Toss quickly to create a creamy sauce without scrambling the eggs.

Make the sauce by mixing eggs, Grana Padano cheese, and black pepper in a bowl.
Fry the bacon until crispy in a pan, then add the cooked spaghetti and pasta water and mix.
Turn off the heat, let it cool slightly, then add the egg sauce and gently toss to finish.
