• Apricot compote: 180g apricot, 35g sugar, a pinch of salt, 10g honey, 6g lemon juice, 4g cornstarch, 8g water
• Apricot syrup: 50g water, 15g sugar, 5g lemon juice, 10g apricot compote liquid
• Pistachio cream: 65g white couverture chocolate, 35g pistachio paste, 120g cold cream cheese, 15g sugar, 1g salt, 2g vanilla extract, 220g cold heavy cream
• Decoration: apricot, sugar as needed
