  • Instead of using a food processor, press the garlic with a knife to coarsely chop it. This leaves small chunks that provide a richer garlic flavor when chewed.
  • When stir-frying gochugaru, reduce the heat slightly to prevent burning if the mixture seems dry, or drizzle soy sauce around the edge of the pan to enhance the smoky flavor.
  • When adding the starch slurry, do not turn off the heat. Pour it in gradually in a circular motion while gently stirring to keep the tofu intact and achieve a smooth consistency.
