Recipe 🍳

Cut the green parts of green onions into 5–7 cm lengths. Remove garlic stems and crush them; slice ginger thinly.
Pour generous vegetable oil into a pan, add garlic and ginger, and slowly extract their aroma over low heat. Remove them once fragrant.
Add the green onion greens to the aromatic oil and fry slowly over low heat until they turn dark and crispy.
Remove the fried green onions from the oil and set aside separately.
In the remaining green onion oil, combine sugar, noodle oil, and dark soy sauce. Heat briefly until the sugar dissolves, forming the noodle dressing.

Boil thick noodles according to instructions, rinse under cold water, and drain thoroughly.
