- Somyeon noodles, 1 serving
- Perilla oil, 3 tbsp
- Soy sauce, to taste
- Vinegar, a little
- Oligosaccharide, a little
- Water, a little
- Perilla powder, 1 tbsp (optional)
- Seaweed flakes, to taste
Recipe 🍳
- Boil plenty of water in a pot, add the somyeon noodles, and stir well initially to prevent them from sticking together.
- Instead of repeatedly adding cold water when the water boils over, reduce the heat to medium and cook the noodles evenly.
- Immediately rinse the boiled somyeon noodles vigorously under cold water to completely remove the starch.
- Drain the rinsed noodles thoroughly by shaking them off in a colander or sieve.
- In a bowl, combine 3 tbsp of perilla oil, soy sauce, vinegar, oligosaccharide, and a little water to make a sweet and sour mixing sauce.
- If you want to add a rich and savory flavor, mix in perilla powder with the sauce according to your preference.
- Place the drained somyeon noodles in a bowl, pour the prepared soy sauce and perilla oil sauce evenly over them.
- Top generously with plain seaweed flakes, which are not seasoned and have no salt, and gently mix to complete the dish.
- Boil somyeon noodles in boiling water, then reduce heat to cook. Rinse vigorously under cold water and drain.
- Mix perilla oil, soy sauce, vinegar, oligosaccharide, and water to make the sauce, adding perilla powder as desired.
- Pour the sauce over the noodles, top with plain seaweed flakes, and mix well.

- When noodles boil over, lowering the heat instead of continuously adding cold water is a less troublesome method.
- The chewiness of the noodles is determined more by the process of thoroughly washing off the starch in cold water than by the boiling time, so rinse them strongly.
- Seasoned seaweed flakes (gimjaban) are already salted, which can make the noodles too salty, so be sure to use plain seaweed flakes.
- Using brewed soy sauce or regular soy sauce provides better umami and sweetness than soup soy sauce, making it more suitable for the mixing sauce.
