Ingredients needed 🛒2 servings
- thin wheat noodles for 2 servings (size of two 500 won coins)
- sesame oil 3 tablespoons
- delicious seasoning sauce 4 tablespoons
- cucumber 1/2
- old kimchi (rinsed) 2–3 pieces
- green onion 1/3 stalk
- seaweed 1 sheet (or appropriate amount of crushed seaweed flakes)
- whole sesame seeds 2 tablespoons
- boiled egg 1
Recipe 🍳
- Slice the cucumber thinly, and finely chop the rinsed old kimchi. Finely mince the green onion.
- Place the seaweed in a ziplock bag and rub it to create fine seaweed flakes.
- Boil thin wheat noodles in water. After it starts boiling, add cold water 1/3 cup at a time, repeating this process three times to achieve firm, chewy noodles.
- Rinse the cooked noodles under cold water and thoroughly squeeze out all excess moisture.
- Transfer the noodles to a bowl and add 3 tablespoons of sesame oil, mixing well to evenly coat the noodles.
- Add 4 tablespoons of delicious seasoning sauce and mix thoroughly. Then add the minced green onion and crushed whole sesame seeds, and mix once more.
- Serve the noodles in a bowl and top with sliced cucumber, old kimchi, seaweed flakes, and boiled egg.
- Slice cucumber and rinsed old kimchi; finely chop green onion.
- Boil the noodles, rinse under cold water, and squeeze out all moisture.
- Coat the cooked noodles with sesame oil first.
- Add the delicious seasoning sauce, green onion, and sesame seeds; mix well.
- Serve in a bowl and garnish with cucumber, kimchi, seaweed flakes, and boiled egg.
Cooking tips 💡
- Do not add salt when boiling the noodles, as it raises the boiling temperature too much and can ruin the noodle texture. Use plain water instead.
- Coating the noodles with sesame oil before adding the seasoning sauce prevents them from becoming soggy or sticking together.
- Rinse the old kimchi thoroughly with water before use, as leftover chili powder may overpower the clean, savory flavor of the sesame oil noodles.
