Yoon Yi-ryeon's Butterbur Kimchi

Ingredients needed 🛒4 servings

• 600–700g butterbur leaves before trimming
• 3–5 red chili peppers
• 4 cheongyang chili peppers
• a little shredded onion, shredded carrot, and large green onion
• 1 medium onion, to be blended
• 8 tbsp Jin-ganjang
• 5 tbsp maesil syrup
• 1 tbsp raw sugar
• 4 tbsp gochugaru
• 1 heaping tbsp minced garlic
• 0.5 tbsp ginger syrup
• 2 tbsp soju or cooking wine
• 2 tbsp sesame seeds
