Ttukdak Hyung's Super Simple Eoseongcho Chicken Soup

Ingredients needed 🛒2 servings
- 1 whole chicken
- A little soju
- A handful of dried eoseongcho mushrooms
- 1 samgyetang herbal pack
- A little wild ginseng
- A few dried jujubes
- A few cloves of garlic
- 1 green onion
- A few abalone
- A little rock salt
- A handful of chives
Recipe 🍳
- Boil the chicken and soju in water for exactly 5 minutes, then remove and drain to eliminate impurities and blood.
- While the chicken is blanching, lightly rinse the dried eoseongcho mushrooms under running water.
- Place the blanched chicken in a pot and add enough fresh water to cover the chicken.
- Add the samgyetang herbal pack, wild ginseng, dried jujubes, garlic, rinsed eoseongcho mushrooms, and green onion, then simmer for 30 minutes.
- After 30 minutes, remove the green onion and herbal pack that have infused the broth, and add a little water if needed.
- Add the cleaned abalone and simmer for exactly 5 more minutes, then season to taste with rock salt.
- Finally, add the chives and cook just until wilted to complete the dish.
- Blanch the chicken with soju for 5 minutes, and lightly rinse the eoseongcho mushrooms.
- In a pot, add the chicken, samgyetang pack, eoseongcho mushrooms, and herbs, then simmer for 30 minutes.
- Remove the green onion and herbal pack, add the abalone and simmer for 5 more minutes, then season with salt and top with chives.
