Ingredients needed 🛒3 servings
- Beef (thinly sliced) 300g
- Chinese noodles (or udon noodles) for 2-3 servings
- Egg white 1
- Starch powder 3 tbsp
- Cooking oil as needed
- Minced ginger 1 tsp
- Minced garlic 1 tbsp
- Onion 1/2
- Soy sauce 2 tbsp
- Corn syrup 2 tbsp
- Oyster sauce 1.5 tbsp
- Sugar 1 tbsp
- Starch water 2 tbsp
- Scallions a little
- Sesame seeds a little
- Sesame oil 1 tbsp
Recipe 🍳
- Place thinly sliced beef in a bowl. Add 1 egg white, starch powder, and 1 tbsp cooking oil. Mix well to coat the beef with a soft batter.
- Heat oil in a pan. Add the battered beef pieces one by one and fry until golden and crispy. Remove and set aside.
- In another pan, add a little oil and stir-fry the minced ginger, minced garlic, and thinly sliced onion over high heat until fragrant.
- When the onion becomes translucent, add soy sauce, corn syrup, oyster sauce, and sugar in order. Stir until the sauce comes to a boil.
- Once the sauce boils, add the starch water little by little, stirring until the sauce thickens and becomes glossy like Chinese jjajang sauce.
- Add the fried beef to the sauce and quickly toss over high heat, being careful not to let the batter detach.
- Place the cooked Chinese noodles in a bowl, top with the beef stir-fry, and garnish with scallions, sesame seeds, and sesame oil.
- Mix beef with egg white, starch powder, and oil; then fry until crispy.
- Stir-fry garlic, ginger, and onion; add soy sauce, corn syrup, oyster sauce, sugar, and starch water to make a thick Chinese-style sauce.
- Quickly toss the fried beef in the sauce and serve over cooked noodles.
Cooking tips 💡
- Minced ginger is essential to remove the beef's gamey flavor and add an elegant Chinese aroma.
- Once the fried beef is added to the sauce, toss quickly to prevent the batter from swelling and peeling off.
- If Chinese noodles are hard to find, fresh udon or kalguksu noodles work perfectly as substitutes.
