Ttukdak Hyung's Gaeseong Juak

Ingredients needed 🛒2 servings

  • Wet glutinous rice flour: 250g
  • All-purpose flour: 50g
  • Sugar: 50g
  • Makgeolli: 40g
  • Hot water: 40g
  • Salt: 0.2 spoon
  • Cinnamon powder: 0.2 spoon
  • Water: 160g
  • Jocheong (rice syrup): 160g
  • Whole cinnamon: 20g
  • Ginger: 10g
  • Star anise: 1g
  • Nuts
  • Whipped cream
  • Shine Muscat
  • Cocoa powder
  • Green tea powder

Recipe 🍳

  1. Sift the following ingredients through a sieve. 1) Wet glutinous rice flour: 250g. Be sure to use wet glutinous rice flour. 2) All-purpose flour: 50g. 3) Sugar: 50g.
  2. Add the following ingredients to the sifted powder, knead into a dough, cover, and let it rest at room temperature for about 30 minutes. 1) Makgeolli: 40g. 2) Hot water: 40g. 3) Salt: 0.2 spoon. 4) Cinnamon powder: 0.2 spoon.
  3. Divide the rested dough into 30g portions, roll them into balls, and make a small hole in the center.
  4. Pour plenty of cooking oil into a frying pan. When the oil temperature reaches 120°C (248°F), add the dough and fry.
  5. Once the dough floats to the surface, slowly increase the oil temperature to 160°C (320°F) and fry until golden brown on both sides.
  6. In another pan, combine the following ingredients and boil over medium heat. 1) Water: 160g. 2) Jocheong (rice syrup): 160g. 3) Whole cinnamon: 20g. 4) Ginger: 10g. 5) Star anise: 1g.
  7. When foam appears, reduce the heat to low and simmer for another 15 minutes, then let it cool.
  8. Dip the fried dough into the jocheong syrup, coat evenly, and top with your desired toppings to complete. 1) Nuts. 2) Whipped cream. 3) Shine Muscat. 4) Cocoa powder. 5) Green tea powder.
