Recipe

Soak dakguktteok in cold water before cooking. Slice the white part of green onion diagonally, and finely chop the green leaves for garnish.
Whisk egg without separating yolk and white, add a pinch of salt, then cook into a thin omelet over low heat in a lightly oiled pan.
Let the cooked egg omelet cool slightly before slicing—otherwise it crumbles easily when cut.
Place both packs of store-bought galbi tang into a pot, add 1 cup (200ml) of water to prevent overly salty broth, then bring to a boil.
Once boiling, taste and adjust seasoning with salt if needed. Add sliced white part of green onion and 3 pinches of black pepper.
Add soaked 400g of dakguktteok to the pot and maintain high heat while continuing to boil.
As soon as the dakguktteok floats to the surface, turn off the heat immediately to prevent cloudiness or overcooking of the dumplings.
Transfer the dakguktteok to a bowl first, then arrange the prepared egg omelet, chopped green onion leaves, seasoned seaweed, and red chili garnishes neatly on top. Pour broth just enough to cover and serve.

Whisk egg and cook into a thin omelet over low heat. Cool completely, then slice thinly. Prepare garnish vegetables.
Combine galbi tang packs and water in a pot, bring to a boil. Adjust salt to taste, then add soaked dakguktteok and boil over high heat.
Turn off heat as soon as the dumplings float to the surface. Place dumplings and colorful garnishes in a bowl, then pour broth to finish.

Cooking tips

Store-bought beef bone broth can sometimes be greasy and heavy, but using galbi tang broth gives you a clean yet deeply savory meaty flavor.
For neat, long, thin slices, let the egg omelet cool completely before cutting.
When dakguktteok floats to the surface, it means they are fully cooked inside. To preserve chewiness, do not continue boiling—turn off heat immediately.
